I was able to get my soft, chewy and slightly brownie-like texture this time round. My previous attempt with the same cookie batter yielded a more crispy batch of cookies. This time round, I moulded a thicker cookie dough onto the baking sheet for every individual cookie. Baking time remains approximately the same, about 12-13 mins at 160 degrees celsius. I took out my remaining ball of cookie dough from the freezer and sit at the room temperature for about 1-2 hours or until the dough has fully thawed and suitable to mould. I moulded each cookie individually instead of rolling and slicing from a long cylinder of dough. They are similar to subway's double chocolate cookie! Just play around with the thickness of your cookie dough and the baking duration to get your desired cookie texture. This cookie recipe is fantistically awesome!

On a budget date with one of my homies today. Where to head to on a budget date?Apart from hawker places, "The Plain" was the first cafe that flashed in my mind straight away. It's my 2nd visit and it is still as fantastic! Ordered the same drinks as my first visit. Great coffee, great catch up. 

Talking about cookies, the first thing that came to my mind is none other than subway! I am a huge fan of subway cookies. If not for the sinful calories, I will have them everyday! I love how soft and chewy their cookies are! My favourites are chocolate chip and white chip cookies! Their double chocolate chip cookie is probably one of my last few options. Ironically, I fell in love with the world peace cookies that my friend baked for us during one of our meetings. They were really really yummy and i couldn't stop snacking on them throughout the meeting. Although i am a great fan of cookies, i hardly bake them because I don't seem to connect well with cookies. They are delicious but i just cant seem to bake 'nice-looking' cookies. Whenever i bake cookies, they always turn out to be very crispy.  This recipe should yield a soft, chewy and slightly brownie-like cookie but they were still on the crispy side when i bake them. The next time I'll probably bake slightly bigger and thicker cookies so they would be softer and chewy. This recipe is a must keep and i'll definitely bake them again! I've reduced the sugar level from the original recipe so that it complements the sweetness from the chocolate chips.

An impromptu dinner at Kith cafe at Parkmall with the boys yesterday night. Browsing at my to-hop-cafe list, many of the cafes close at 6pm so we ended up going to Kith. So I went to do my homework online and checked out their popular dishes. Many were raving about their big breakfast. Unfortunately, we did not get to try that because their brunch menu stops at 3 pm. They had a black board of favorite dishes by their own staff it seemed like carbonara pasta and iced latte emerged as their top two favorites!

It was an adventure with Clarence today. It was really nice of him to send me for my interview which was all the way at the East side of this island. Hence, we decided to drop by Chye Seng Huat cafe after my interview since we were in the vicinity. I have been wanting to visit this cafe after seeing so many reviews about the coffee served at this little hardware store. Upon entering, we were overwhelmed by the strong aroma of the coffee beans. Indeed, their coffee was really good. Even a usual non-coffee drinker like me appreciates this cup of espresso! However, their prices were pretty steep. Walnut Brownie + 2 Espresso w milk. Total Price: $15.50. We ordered a set which comprises of espresso and brownie for $10 and added 1 more espresso for $5.50.

Walnut Brownie: $5. Crunchy on the outside, moist on the inside. The brownie was pretty good. Love the big chunks of walnuts.

We wanted to try their sandwiches but their kitchen closes at 5 pm daily. Well, I feel that their food is slightly on the higher end for a student like me. I will not specially travel all the way to the East to visit this cafe again because it is too inconvenient. I believe that there are other hidden cafes probably worth exploring than this place. However, if you have not visited this cafe, do try it because you may like the place! Well, it's just ndividual preferences.

No no, I did not convert this little space into another cafe hop blog. There are so many great and fantastic blog cafe hoppers. I can never be as fantastic as them. Recently, a friend asked me what do i do with the photos of food that i took all the time. I dont know. In fact, they just sit quietly in my memory card. So, i decided to blog about them and share my food hunt experiences since i love to eat. Going around to the different cafes, restaurants and hawkers to eat is not just solely about food, I gain inspiration and ideas along the way for my future dream.  Anyway, back to these mini new york cheesecakes that i baked specially for my brother in law. I really love new york cheese cakes because they are so rich in cream and cheese. These cheesecakes are fabulous. . It's not too sweet. Just the right amount of tanginess. Totally loving them. I think i can finish everything by myself since i am an ultimate cheese lover. Made them in cupcakes because it is much easier to distribute and the baking time-span is lesser too.

Recipe (serves 11 mini cheesecakes)
375g Cream Cheese
75g Caster Sugar
37.5g Sour Cream
1 tsp Vanilla Essence
1tbsp Lemon Juice
1 Egg
1/2 Egg Yolk
15g Flour
100g Digestive Biscuit
1tbsp Melted Butter
4-5 tbsp Jam (optional), for topping

1. Preheat oven to 150 degrees celsius.
2. Crush digestive biscuits and mix melted butter with the crushed digestive biscuits. Scoop about 1tbsp of crushed digestive biscuits into each cupcake liner and compress them.
3. Using an electric mixer, beat cream cheese and sugar until smooth.
4. Add lemon juice, vanilla essence, flour and mix until combined.
5. Add eggs and beat until light.
6. Add sour cream and mix well. Spoon the cheesecake batter into the muffin liners.
7. Bake them in water bath (Place the muffin pans with the cheesecake batter in a tray of water in the oven) in the oven for about 20 mins.
8. Once time is up, switch off the oven and leave the oven door ajar for 30 mins, with the cheesecakes still inside the oven. Bring the cupcakes out after 30 mins.
9. Pop the Jam into the microwave for about 30s. Pour the Jam mixture onto the cheesecake and refrigerate these cheesecakes for approximately 4 hours or preferably overnight. Enjoy!

These cashew nuts, which serve as an appetizer are fantastic. I am a cashew nut lover.

Fried Yam Balls, A dish which i will always order when i go for dim sum. In fact it is my favourite. Unfortunately up till now, i haven found one that is up to my liking. These fried yam balls are average, probably slightly better than Swee Choon's but not yet fantastic.

Pan Fried dumplings. This is delicious!

Fried carrot cake. I could really taste the difference between theirs and any other carrot cakes. Their carrot cakes are more delicate.

Luo Mi Fan.

Char Siew Pao. One of my favourites there.

Pork Ribs. Don't really fancy this dish. Its too oily and fatty for me.

Okay, now comes my favourite dimsum of all times. It is not as buttery as the ones from Victor's Kitchen. ( I dont really fancy the ones from Victor's kitchen. Too buttery for me.) This is better than SweeChoon's because the standard of Swee Choon's salted egg custard pao is falling. :(

They are pretty generous with their filling. Loving how rich it is. NOMZ.

Saturday High Tea Buffet At Museo, Sentosa Cove. I love the ambience, pretty posh and not too crowded. Perfect for a good quality meal with your family and friends. It was a treat from my sister for my brother in law's birthday! The High Tea Buffet i had this afternoon was certainly different from the others i had in the past. It was superb. The variety was pretty limited but the food served was quality good food. Well, quality is certainly better than quantity right? Hahaha. Unlike the other international high tea buffets i had been to, which serve coffee and tea from the coffee machine, we have unlimited orders of drinks on the menu. So, the three of us ordered about 8-9 drinks in total and they were really terrific!

 Love their tea cups and the sugar cubes. Their Hot Chocolates were really rich and infused with roasted hazelnut flavor. We tried all their Hot Chocolates except for the one with whiskey as that is only applicable to those who go for Weekend Beer Retreat Buffet.
I was pretty disappointed with their desert. There were limited cakes and pastries and they were pretty ordinary. The scones were pretty dry. I prefer the fruits and marshmallows to cakes and pastries. Well, there are better buffet deserts elsewhere.
