Garlic Rosemary Roasted Potatoes

My love hate relationship with potatoes. Who doesn't love potatoes? They are every family's comfort food! Sadly, I have been avoiding potatoes ever since i saw an article on Straits Times a couple of years back because potatoes are the No.1 food that increases your weight. But how can anyone resist potatoes? All the nice food are made of potatoes! Potato chips, sheperd's pie, fries, gratin, rosti and the list goes on and on and on. Oh well as i've always mentioned, as long as you moderate your intake, you can eat everything!! Made these super easy roasted potatoes for my packed dinner to school. Perfect to be served as snacks during mid-day or sides.
Recipe
8 mini potatoes
Salt & Pepper
2 tbsp Olive oil
1 tsp Dried Rosemary
1tsp Dried Parsley
6 Garlic cloves (grated)
3 Garlic Cloves (chopped)
1. Preheat oven to 200 degrees celsius. Wash the potatoes and cut them into quarters or bite sized pieces
2. Drizzle these potatoes with some olive oil
3. Sprinkle some salt and pepper and add the herbs and both grated and chopped garlic and mix well.
4. Line your baking tray with baking paper. Send these marinated potatoes into the oven and bake for about 30-40 mins Enjoy!
